Inspiration behind the piece: I choose to do a copper background as this was inspired by some of the copper pots in the kitchen, and I laid them on in a tile effect to echo the reclaimed tiles that have been used in the recent refurb at Fifteen. The 15 butterflies symbolise the apprentices and the journey of transformation they go through when they take part in the Fifteen programme. They are in a swarm to show the bustling atmosphere of Fifteen. The butterflies are also made out of the menus from the restaurant to incorporate the new style of shared cuisine that is now being served at Fifteen.
